Spinach Pancakes

These spinach pancakes are probably the best things since sliced bread. Before I went vegan, I always thought that these kinds of recipes needed eggs to bind, and that could not be further from the truth. The banana works as a great binder, and best of all…. you can lick the spoon while you are busy making it! No yucky risks of Salmonella here people!
WHAT YOU WILL NEED:
1 very ripe banana
1 cup baby spinach
2/3 cup rolled oats
1 cup almond milk
Tsp organic cold pressed coconut oil
Place the oats in a food processor/ high-speed blender, and blend till the oats become flour. Add the remaining of the ingredients, and blend until either smooth or chunky (whichever you prefer).
Place a teaspoon of organic cold pressed coconut oil in a shallow frying pan. Scoop small amounts of the pancake mixture into a shallow frying pan, and fry (on a very low heat) till it becomes light brown in colour.
